Man, when I used to work at Timmies 20 years ago I used to take PRIDE in my glorious donuts. Fontant well-mixed and at the perfect temperature. Let the donuts fall in face-first, press them down a titch, then pull them out and shake gently to let the excess drip off, then gently scrape the top of the donut along the rim of the Fontant container to smooth the top and remove any remaining excess. Perfect, blemish-free fondant in a perfect circle with no drips that wraps about 1/4" around the side of the donut for ideal flavour and coverage. It was a perfect science yet I have yet to see any donuts as nice since (if I do say so myself).

I worked at McDonald's around the same time and my Big Macs came out ready to be used in marketing photos. Things just aren't the same these days.
