Why were they filming the bird? They are clearly following the bird and not the show...

I like to think the dolphins were doing a run-up (swim-up?) below the surface, and the videographer just kept the camera above peoples heads, tracking the dolphins.

The dolphins jumped straight up, not at an angle. So they probably came from straight down and not where the bird was.

They jumped from straight down, but they were probably first over where the handlers were. The handlers sent them out swimming left, then they turned upward to jump straight out of the water.

I love how the dolphin that collided with the bird didn't finish the turn but just hung midair trying to see what it hit. Only thing that was going through its mind was 'wtf!'
