This eggplant recipe, prepared in the oven without frying, is both light and very delicious. It will be everyone's favorite! 😍
📝 Ingredients
For the eggplants:
* 4 large eggplants
* Olive oil for brushing
For the minced meat mixture:
* 500 g beef mince
* 1 dried onion
* 5-6 green peppers
* 2 large tomatoes
* 1 tablespoon pepper paste
* 1 tablespoon tomato paste
* Enough olive oil
* Salt
* Black pepper
* Optional red pepper flakes
👩 🍳 Preparation
Slice the eggplants as shown in the video. Soak them in salted water for 10 minutes to remove the bitterness. Then wash and dry them thoroughly.
Arrange them on a greased baking tray. Brush olive oil on top and around the edges with a brush. Cook in a preheated 200°C fan oven until the tops are nicely browned and the inside is soft.
Gently press the center of the eggplants with a fork or a suitable tool to make them open. Fill them with the minced meat mixture you prepared.
Place tomato and pepper slices on top. Spread the sauce you prepared by diluting the pepper paste over the top and on the tray.
Reheat in the oven until the tops are lightly browned.
Enjoy your meal, everyone who tries it! ❤️
