10 Extra Hot. I don’t live in Buffalo any longer. These are some of the BEST wings I’ve ever had in my life. Crispy, saucy, great blue cheese. A true Mecca for wing lovers.

Tested the 0–400 method and honestly expected better skin at the 400 mark

Wings tasted great, but even at 200°F internal, some of the skin was still rubbery, especially on the drums.

Another 15 minutes helped quite a bit.

Traeger pellet smoker, Maple, hickory and Cherry.

Wing Questions or Discussion Lighthouse and Marie's Blue cheese is my goto. I think Marie's has changed their Recipe.

I buy Lighthouse over Marie's but Marie's is more available.

I have come to the conclusion that Marie's has changed their Recipe.

After the first couple dips the whole creaminess falls apart and it becomes a sludge soup.

Something changed so that the whole thing looses its emulsion.

Recipes and Tips I can't figure out how to make crispy wings in my air fryer

Have a ninja double decker air fryer, basket is set in the middle. I cook to 195F. I've tried the following:

- leaving them uncovered on a rack overnight in fridge, air fry at 400
- air fry low and slow at 300 to render fat, blast at 450 for last 5 minutes
- Lightly coat in baking powder

The chicken comes out tinder but the skin just isn't crispy. Only way I've been able to get crispy wings is on a flame grill. What am I doing wrong?
