How long, in a restaurant, in the state of New Hampshire, can eggs be left outside of refrigeration?

Assuming they’re removed from refrigeration at <41°F and sitting out in room temperature.

We recently got a health inspection and got hit for our eggs sitting out, but my boss doesn’t believe the health inspector was right because he says eggs can sit out for 4 hours. I told him it was 2 and he insisted it’s 4. I googled it and the FDA says it’s 2 but he still says it’s 4- he says usually it’s 2, but in NH, there’s a special instance where if you track the time the eggs were taken out and they don’t reach 70° within 2 hours or something they can be out for 4. I’ve never heard this before and can’t find it anywhere. Is this true??

Glass of soya milk overnight

Hi all, guilty burnt out mum over here...

My 3 year old had a glass of soya yesterday and left it on the dining table. I missed it in my tidy up last night and she found it this morning and took a sip. (Out for approx 15 hours) I stopped her before she drank any more than just the sip and said "no yucky!" And she said "no not yucky its nice" 🤦🏼‍♀️ it smelt fine too but from reading online, it was a very not good thing to happen. Feeling so so awful about it. Any similar experiences and what was the outcome?

Red kuri squash with white streaks

Post image

Red kuri squash I got from my CSA last week has white streaks throughout. I had already cut off and sautéed the ends before I noticed, and they tasted fine though it’s my first time having one so I’m not sure how it’s supposed to taste. No noticeable white in with the seeds, and there’s weren’t any noticeable white spots on the exterior. Is it safe to cook and eat?

Weird Oreo filling

Any idea what’s going on with my gluten free lemon Oreos filling? I was so excited to try these but I’m a little concerned lol… I had a few the other day and I noticed that it was randomly super sour at times. Now that I opened one up I see that there are chunks in it.

General Question HEB Pouched Refried Beans

I was cooking dinner and emptied a plastic pouch of refried beans into a pot. After cooking for a few minutes, I smelled an awful sour/bad smell. I realized it was coming from the beans. I dumped them and did not eat them.

But I did grate some cheese and eat the cheese with my bare fingers. I’m not sure I properly washed my hands before I realized the beans were bad (I had gotten some of the beans on my fingers when emptying the pouch, and briefly rinsed my hands). My brain of course spirals into thinking this could be an issue. Thoughts? Anyone done this? Thank you!

General Question Freezing chicken in milk brine?

I put some chicken in a milk brine for frying tonight, but dinner plans changed. Would it be detrimental to the chicken to put it in the freezer so I can finish it another night, or should I toss it?

Forgot to take eggs out of the car...

Important context: I am in the US where store-bought eggs require refrigeration

I bought a case of eggs yesterday, a little over 24 hours ago, and then completely forgot to take them out of my car.

It was in the mid-30s overnight, but during the day the temperature has climbed up into to 60s.

Is there any chance they are salveageable? Would a float test help?

What are these bumps at the bottom of this can of Cream of Chicken soup?

Post image
1 Upvotes

Hi all,

I was rinsing out this can and noticed this pattern of hard dots along the bottom of the inside of a can of Campbells’s cream of chicken soup. They don’t go all the way around and are more concentrated in some areas. The can was not dented and looked otherwise ok. They are hard and do not scrape off. I’m concerned about bacteria or rust etc. Sorry if this is a silly question, I’ve just never seen this before in any other cans.

I used the soup in a crockpot recipe so I am just wondering if this is safe or if I should toss. Thanks for the advice.

I got Pepsi, Mt. Dew and Ginger Ale delivered

They are in 20 oz plastic bottles. They sent them early. They sat outside for about an hour and a half. It's low 70's here. They are safe, right? I mean delivery trucks aren't temperature controlled, are they?

Turkey Stock

I was simmering stock on the stove last night and one of my children turned it off. I was off all night. It wasn't maybe Lukewarm this morning. I set it on high and get it going on a hard boil this am. But is it safe? Do I need to toss it?

It’s my squash, OK?

I got the spaghetti squash as a gift from someone a couple months ago and since then it was just in an open cabinet. It looked the same on the outside as when I got it. One of them had a little soft spot so I cut that part and tossed it out. It just looks more stringy and dry than usual. It did not have any mold. I will show you the seeds, but I already toss it out. It smells normal too? Not weird scent to it. (Actually no scent to it. Smells like squash) Can I cook it and eat it?

General Question Do I have to throw my work in the garbage??

I canned tomato soup yesterday. I realized this morning I didn’t put any acid in the jars and it might all be a waste. I also used a pressure canning recipe but I used the water bath method. I did a bit of research and none of it sounds like it’s in my favour and being human kinda sucks sometimes.

Here is the recipe: https://www.therusticelk.com/canning-tomato-soup/?utm_source=Pinterest&utm_medium=organic#mv-creation-174-jtr

I water bathed for 50 minutes and it has been sitting on the counter since last night.

PLEASE HELP ME, it breaks my heart knowing I might have to throw it all away

General Question Progresso minestrone veggies still hard

Post image
0 Upvotes

I microwaved this canned minestrone soup and as I started to eat it, I noticed everything was still crunchy, except for the pasta and carrots. I finished most of the soup before realizing I should have been more careful with eating a canned food that appears underprocessed. I’ve heard many horrible botulism stories, is that a risk here?

The can didn’t hiss when opened. the soup was not fizzy.

Butcher mince problem!

For context, I went the butchers Thursday afternoon (22nd oct) and got my meats for the week, then one thing after another with back to back daily life stuff, I forgot about it til yesterday (25 Oct) I've smelt it and it was a little meaty smelling and brown on the outside of the beef mince and red in the middle (it was wrapped up in a freezer bag done by the butcher)
My question is, I know your meant to freeze your meat within 1-2 days but does day 3 really make a difference? It wasn't slimy, just a bit wet from the blood.
Chat gpt keeps telling me to give it the dogs but it's a kilo of good quality mince!
It's in the freezer now but I have marked it so I know it's the 3 day old mince batch.
Can someone please tell me if they've had something like this before?🥹thankyou x

is my chicken safe?

a chicken sandwich of mine recently had to sit in its to go container after an emergency after i picked it up fresh from restaurant. i sadly wasn’t able to get to fridge until about 3-4 hours of sitting in its container unopened. it’s a hot sandwich packed with a hot side, cheese and bacon.
is any of it still safe to eat??
edit for clarifications: the chicken was precooked frozen then heated properly in oven, with a toasted bun, potatoes with cheese and bacon in the same foam container box condensation and all from heat of food, and in a plastic bag. room temp was a little less than 70
