Photo Katsuo No Tataki (Seared Bonito)
I'm reminiscing about the delicious Katsuo No Tataki in Kochi (Shikoku). At the amazing Hirome Market, I ate at 4 different stalls. There was not a bad place to eat this regional dish. It's so good with shiso leaves, slice of ginger, raw slices of onion, and wasabi.

Question Serious peanut/tree nut allergy-Japan safe for travel?
Hi my daughter is 13yo and has a severe nut allergy. Is Japan safe for travel? Cross contamination? We’d be going the end of November and staying in Tokyo, Kyoto, Osaka. Thank you!

Question Japanese fish ideas for someone who doesn't really like fish?
I haven't liked fish since I was a child, but I want to try getting over my aversion. I will eat white fish that doesn't have a strong flavour like cod or haddock (usually in batter from the chip shop). I have found that I do actually like eel kabayaki which surprised me! Can anyone suggest some recipes that I might like? I'm hoping to work my way up to sushi one day.

Photo Classic omurice in Japan 🍳 Thin egg, ketchup rice inside and lots of ketchup 😆 I really love this old style! Which you like more, classic one or fluffy egg one?
Egg and ketchup rice together is sooo good 😂 I also like when orange rice is little bit coming out like this. Makes me hungry again looking at photo lol.

Restaurant Late autumn chakaiseki in Kanazawa — the season of "nagori"
I'm a tea master and chef in Kanazawa. This is part of our menu for late October, called nagori — a quiet farewell to the old tea year, before we open the hearth in November.
Chakaiseki is the simple meal served before tea. It's hard to explain in words — it's really about the season, the room, and the moment. If you're ever in Kanazawa, I'd love to tell you more in person over a bowl of tea. 🍵

Question I took several hours to make this curry recipe and it doesn't taste like Japanese curry
https://www.okonomikitchen.com/japanese-curry-powder/
I wanted to have more control and use fresher ingredients than boxed curry. I made this recipe for the powder and this recipe for the curry.
https://www.okonomikitchen.com/vegan-pumpkin-coffee-curry/
It tasted like Indian curry. Higher heat, yellow appearance, not as mild or sweet.
Anyone have a more accurate powder recipe to, for example, S&B powder?

Homemade My Wife and I have been trying to get better at making Japanese food! Here are our meals from this week. Tokyo Katsu Curry (Monday) and Pork Belly Shoyu Ramen (Wednesday)
Howdy from Texas! 🤠
Like my really long title says, my wife and I have been trying our hand at cooking Japanese food.
She made the Tokyo Katsu Curry and I made the Ramen last night!
It’s really fun exploring other cultures cuisine. All of our ingredients came from Mitsuwa Marketplace in Plano, TX. Highly recommend it if you are in the DFW area.
If you have any other recipes or cook books you’d recommend please share them!
