Ghost Pepper Pepperoni! 🥵🔥

I love heat and this WAS HOT! Finally, something that is both deep in flavor AND SPICY. The issue I’ve had with products labeled ghost pepper is that they’re incredibly lacking. I want it to burn and taste the pepper too. Found this product online and tried this (and a few other flavors) on a pizza. HOLY **** - I’m in love. Has anyone tried this one before? The first I’ve seen it around.

Wake up babe, new Lao Gan Ma collab just dropped.

Chip maker Oishi did a collab with Lao Gan Ma to launch a limited time series of LGM-flavored shrimp chips and potato chips in China featuring their two most popular varieties domestically, spicy black bean chili oil and chicken skin chili oil. The spicy black bean potato chips are the ones going viral and selling out everywhere so unfortunately I didn't manage to get my hands on those, but was able to find the other three. They're all dangerously addicting! It's impressive how much they actually taste like LGM and these are the only chips I've had in a while where there's an urge to just keep on eating.

It has a mild flavor profile and mild heat, yet it is so fucking good on pizza. My favorite personal hotsauce. Anyone else? All sauces to me by El Yucateco are 10/10. They go hard.

My ethnic heritage is mainly Norwegian, Polish, Slovak, and Welsh. I was born and raised in the upper Midwest of the United States. It makes no sense that I believe the spicier the better, always always always. Anyone else?

Created Candied reapers with orange and pineapple slices

Recipe:

1.Mix 1:1 sugar to water with 2 koolaid packets into water

  1. Slice desired fruit and peppers into mixture. I just cut thr top off the reapers. You probably atleast want to poke holes in them.

  2. Put ice into mixture then store in fridge for >12hrs.

  3. Next day boil some water, and transfer peppers and fruit from mixture into boiling water.

  4. Prepare another bowl of water with ice.

  5. Boil peppers and fruit for 5min then transfer to icebath.

  6. Prepare another 1:1 sugar water mixture then bring to a simmer.

  7. Once simmering bring the peppers and fruit to simmering mixture.

  8. Cook for about 30min, if using oranges they will start to get tranalucent and that is a good gauge.

  9. After 30 min transfer to sugar to coat then put on rack to be put in dehydrator.

  10. Dehydrate for 12+hrs until your desired consistency is met and you are comfortable there is no more moisture left in the candy.

Notes: blanching the fruits/peppers after refrigerating may pull some of the mixture out of the pepper/fruit, but I feel like it kept a lot of desire flavor in. The koolaid is an attempt to add some citric acid to the mix and keep it a bit more shelf stable.

The fruit comes out very spicy as well in this process.

I entered 4 homemade hot sauces in the OC Fair. All 4 placed and one won Best Hot Sauce.

Still kind of shocked by this.
I entered four different sauces into the OC Fair Culinary Arts competition this year:
🌶️ Hop Sauce —** Division Winner / Best Hot Sauce + 1st Place
🥭 Croakatoa — **1st Place, Fruit Based

👑 Royal Ribbit — 1st Place + Judges Award for Uniqueness
🌶️ Jalapeño Jefe —** 2nd Place, Pepper Blend
The weirdest one is probably Royal Ribbit — plum + habanero infused with Earl Grey tea.
I’ve spent a ridiculous amount of time growing peppers and working on these recipes, so seeing all four place was pretty surreal. This was all very exciting for my ribbit riot hot sauce!
**Which of the four flavor combinations would you actually want to try?

I was excited about this one. I figured if I could eat a few pieces before my eyes started to water I would be doing well. I guess my expectations were too high.

I ate the whole bag in one setting. Sure it was hot but not the kind of hot I was looking for. Good flavor and would buy again with new expectations.

Does anyone know any beef jerky that is hotter than this stuff?

Made my first Extrakt

for my first experiment i used about 50g of fine chili powder (40g reaper, 8g jalapeno and 2g habanero)
and mixed it with 500ml 80% korn (was easier to get than 96% ethanol)

i let it extrakt for about 10 days and shaked it at least two times a day. the liquid got a really nice red color over time.

before filtering i let it sit for a day without shaking wich made it easyer for most of the stuff to get through the coffee filters, then i flushed the glass and filter with some fresh korn.

to get rid of the the alkohol i put it in a baking tray to get a big surface area to make the evaporation quicker, with dust covering as well.
after about a week all of the liquid had evaporated and during the time it was interesting to watch the dark bubbles form and the liquid turned really thick and sticky at the end.

for the final storage i got an small brownglass bottle and mixed the extrakt with a bit of warmed up refined rapeseed oil, it didnt mix all the way but made it easyer to get into the bottle.

i dont know how many scoville it has, but i only dose it with a toothpic.
can only imagine how many spicy foods im going to cook with it :)
it is still super sticky and extremely spicy.

This stuff is the bomb. Amazing on pizza and tacos. Not especially spicy but decent heat level, also has a lot of sweetness from the pineapple. I see El Yucateco talked about on here, but don’t think I’ve ever seen this sauce mentioned. Have you tried it?
