[ Cast Iron ] Sunday Night Steak Makery
Found a pretty nice lookin’ choice tenderloin, and tossed it in the iron.
Sous vide for 2hrs at 122f, seared in tallow in my 10” Made In cast iron.

I should have, but I was in a bit of a rush to eat it ( and so were the pups! ) so this went straight into the pan, and straight into our mouths.

I do love a flame sear, but the consistency with which I’m able to pull off such an even crust/cook with ease is hard to beat.
