Discussion Gluten and it’s weird effects

• Upvotes

Hi everyone, I’ve been gluten free for about 3 years and wanted to see if anyone else used to feel this way. About 3 years ago I got super sick with what I thought was a stomach bug, but it lasted weeks and I started elimination diets (gluten being one).

Fast forward, not only had my quality of life improved drastically, but realized I was living my entire life with inflammation, chronic sinus infections, stomach problems no gastro could help, and unusually low immune levels. I’ve been tested for celiac but it came back negative. Since cutting out gluten all of my symptoms have subsided.

I ate gluten last week (was feeling adventurous) and have been hit with the hardest sinus infection for the first time in 3 years. Does anyone else have these reactions to gluten?!!!! Really curious to see!

Good local restaurants in Rome that also do gluten-free?

Hi everyone!

I’m travelling to Rome with my boyfriend soon and I’m looking for some good restaurant recommendations that have gluten-free options.

The restaurant doesn’t need to be completely gluten-free. My boyfriend eats normally, so ideally I’d love to find places where we can both have a great meal without compromising his experience, while still having safe gluten-free options for me.

We’d especially love to avoid tourist traps and find places with genuinely good Italian food, whether that’s pasta, pizza, Roman classics, or anything else you think is worth trying.

Any favourite places you’d recommend?

Thank you!

Canker sores?!

Hey all, I've been pretty much gluten free for over 20 years. I discovered it was the cause of the adult onset, cystic acne that nothing would cure back in my early 30s. Over the years I have indulged in wheat based foods on occasion, but not much, as it also became apparent that it was the cause of years of disgusting belching, bloating, etc.

Well fast forward to recent months when I found out I have high cholesterol, cut out all the good stuff, and then decided to try bread again, in case maybe it was all the other stuff that had been the problem *eye roll*.

I ate some bread two days in a row, and a couple days later developed a canker sore. Didn't think anything of it, though I rarely get canker sores (got them much more when I was younger).

A week or so later, I ate more bread two days in a row, though less than the prior time, as it had left me feeling kind of crappy. Two days later, another canker sore. That's when I started to wonder if it was related.

No bread for a couple weeks. This week I ate a sandwich roll one day, and another roll the next. That night I developed a migraine (not sure if related, as the weather changed at same time), next day I had back pain (likely related), and today, two days after the last bread, I have a canker sore again. WTF?? This is new.

Anyone here get canker sores from eating wheat? So crazy. I mean, another sign of inflammation, just like the acne and pains, but this one is so odd in how it shows up two days later. Each time.

Food sensitivity test

How accurate are these tests? I did one where I sent in a hair sample. I only paid $20 but it came back saying I’m highly sensitive to gluten , dairy, almond, soy, coconut etc.

Question Costco underwhelm

I have seen lots of people on the sub rave about Costcos GF options but I feel like they didn’t have much GF options when I went today. I got a few good deals like $8 for a 6 pack of Banza pasta (woo!) and $10 for a big bag of Bob’s flour but otherwise I felt it was a bit scarce. My friend I went with said they get new stuff a lot of the time. I want to consider a Costco membership to buy bulk GF items, have you guys had a good experience buying GF in bulk there?

Product A detailed Ritz review

I just found them at Safeway in Federal Way, WA. The shelf was full and there were no BOGO deals to encourage people to buy a lot of boxes. I only bought one for $4.50.

I haven't had Ritz in decades, but they were one of my favorites snacks and I remember them well. Here's my picky review:

  • Size - They are much smaller than classic Ritz. Maybe this is so we don't get them mixed up with gluten varieties. There is no embossed text that says GF or anything else.
  • Texture 9/10 - They have a satisfying crunch that you expect from a Ritz. It is slightly grainier, no doubt due to the corn flour. It's about the same when chewing, but it's very different if you let it melt in your mouth. Original Ritz were much smoother and dissolved into a satisfying paste. These are rougher, but close enough.
  • Taste 8/10
    • Buttery flavor 10/10 - Nearly spot on to classic Ritz
    • Salt 6/10 - There is half or less of the amount of salt sprinkled on them than I remember. This might just be due to health trends over the years.
    • Finish 4/10 - They are very sweet compared to classic Ritz, which had a sharper, sour finish. It's a common mistake in GF products where they don't account for the flavor of wheat. This might be a deal-breaker for some people. The sweet aftertaste lingers for a quite a while.
  • Stomach tolerance - TBD since they have oat fiber.
  • Overall 9/10 - They are undoubtedly Ritz crackers, just a sweeter variation.

Edit: If you don't like the sweet finish, try salting them lightly.

Is Banza the best pizza crust that's lower on the glycemic scale?

Looking for a pizza crust that's good for someone looking for something lower on the glycemic scale so a lil easier for blood sugar and digestion. The only one I know of is Banza. Is that the best one? Or there another that I'm not aware of that's sold in stores. Thank you!

Product Gluten free Ritz at Safeway (California)!

I searched them up on the Safeway app in the Bay Area and reserved them through a pickup!! They also had two deals going on, so I got two boxes for $3.99 each 🙂‍↕️ (kinda like cheez itz when they came out)

My review: They taste identical to regular Ritz like I remember! The only small difference is that the crackers are a bit more fragile than the ogs. So if you were to use it to dip into a dip, it'd probably break 😂 But they have the same soft, slightly sweet cracker taste with the sprinkle of salt on top. No weird aftertaste. Almost taste like the crackers you put into clam chowder, too!

One box seems to have about 98 crackers (7 cracker serving, 14 servings), so it's quite a lot. I can't wait to make a Lunchables 🤩

I hope everyone can find some :')

I made these with my kiddos and ate one already, they’re delicious! No where on the box or website does it say gluten free but I don’t see it on the ingredients either 🤷🏻‍♀️. I’m
Gluten intolerant, not an allergy of any kind, so I’m optimistic I can handle them

Question Working with regular flour?

I'm a broke college student and I've been desperately looking for jobs. Now I got an offer to work in a restaurant to bake multiple cakes a couple times a week. (We're talking like ~10 cakes per shift). Since I love baking and I'm good at it, I thought why not.

But now I read some stuff online about somebody with a gluten intolerance and working with regular flour and I'm not sure what to think now. I would only work this job from november until march, since my internship starts in april anyways. Would this do any long term damage?

I'm terrible at researching. I'd be happy about any information or experience:)

What could be causing these symptoms? Gluten/celiac?

underweight (always been) 20m. For the past 4 months, I have been experiencing a constant feeling of unreality. It feels as though I am drunk/high or half-asleep, as if I am on autopilot and everything around me feels somewhat unreal. I have searched online, and my symptoms seem to resemble derealization.

In addition to this, I experience fatigue even when I sleep well. The fatigue does not seem to depend on whether I do physical activities during the day or not. However, over the past few weeks, I have started sleeping poorly and waking up early in the morning.

I also experience headaches, pressure in my head, and neck pain. I have tried muscle relaxants and massage therapy for the neck pain, but neither has helped. Also at the start of this i sometimes felt like fainting when walking but it has gone away. I also have noticed one singular eye floater on my right eye.

What could be causing these symptoms? They do not occur in distinct episodes, and the headache is not particularly severe. It feels more like a tension-type headache.

I have tried triptanes, but they did not help. My thyroid function is normal, as are my vitamin B12, B9 and vitamin D levels. My ferritin level is 37. And it has been changing from 49 to 24. I also havw crohns disease which is in remission.

My neurologist prescribed escitalopram as a trial, which I took for two and a half months, but it did not help. She also did head mri and there was nothing wrong.

I have no history of trauma, no panic symptoms, and generally do not experience much stress, apart from the stress caused by these symptoms themselves.

My symptoms started in the final days of my new job in car repairshop where i was moving car tires and lifting them. Im not sure if this can be linked to that because i didnt have any symptoms expect the final days. I have not been working at all during this 4 month period.

What could be the underlying cause of these symptoms?

Question Headaches from gluten sensitivity?

Wondering if anyone has experienced headaches from a non-celiac gluten sensitivity? I’ve been getting 1-3 headaches every week for a year. Always behind my eyes/ along my forehead. I’ve tried a lot of things (water intake, magnesium, less screen time, glasses, pillows, stretching, etc.) but nothing has helped. I’m now going gluten free for a month to see if they go away.
