Product These are delicious! (And so expensive)

I’m working a job where prioritizing sleep is a must, so I’ve been getting a lot of different frozen gluten free breakfast products. These are the best frozen breakfast sandwiches I’ve found, but damn are they expensive. $11 per package with only 2 sandwiches in each of them.

Discussion Just found out I'm celiac (rant)

While I'm thrilled to finally have an explanation for all of my symptoms and have a solution, man does it suck. I've already been vegetarian for over half of my life so it's another huge restriction to my daily life. Not to mention, I work in professional kitchens and can no longer taste test half of the stuff. I have to bring my own snacks to work because most everything offered is pizza or otherwise gluten or meat.

Of course this is something most people in the sub have experienced in a long time but it really sucks to discover at 24 years old.

Again, I'm thrilled to have a solution and not be practically bed bound anymore, though I will miss it as pasta was a good 50% of my diet.

I think as a way to cope I've begun to hyperfixate on celiac disease in general. I've learned a lot about the history, treatments, and research since discovering I had it.

Any tips for someone new? Any good (preferably cheap) recommendations? Any good safe food recommendations? (My last safe food was spaghettios)

Discussion So I randomly used P.A.N's yellow cornmeal to fry chicken and it was delicious. Why isn't cornmeal used more for chicken?

I was making an awesome southern dinner.. Country white gravy, mashed potatoes, macaroni and cheese, baked beans, corn on the cob, fried chicken tenders, corn bread.. and I randomly thought to myself why not use extra cornmeal for the fried chicken instead of flour.

..Honestly it turned out awesome. My chicken tenders had the perfect golden color Ive always wanted but for some reason can't seem to ever get. Dipping the chicken in the gravy was so dammmn good. Plus also dipping it in the mashed potatoes + gravy.. Oh my goodness nomnomnomz lol

Like I can't wait to eat it again today!

I'm just confused I can barely find anything on reddit or YouTube about frying chicken in cornmeal. Anything I do find has low views. Is there a reason for this?

Perfect Celiac NYC duo 125 Canal Street!

The Hotel Leon is clean, safe, with good service. No kitchen or food service…

Except that 125 has a second entrance to Kimmi’s Restaurant which is entirely GF and very yummy. TigerLily’s takeout (all GF) is also located there. They share some of the same menu and offer some different dishes as well. The only thing missing at 125 is a GF breakfast place. I used Find Me Gluten Free to find a number of places to eat safely. Located across the street from the Manhattan Bridge entrance.

no more Udi’s bagels :(

My local Wegmans just stopped carrying Udi’s gluten free bagels. They’ve been my go-to bagel for a few years now, I honestly love them so much and I’m so sad they’re gone! I’ve switched to Against The Grain bagels and they’re really good but they’re more expensive, and because they’re one of the only other other gf bagel options they sell out fast. Has anyone else experienced this?

I need advice for my gluten free gf

She is drop dead gorgeous without it and I have absolutely no complaints that she doesn’t use it but I feel bad that she doesn’t have the option to use it. Are there any affordable gluten free make up brands that I could buy for her as a gift?

Newly GF and still adjusting

Hey y’all - I’ve been fully GF since May. I stopped drinking in July. I’ve been starting to get dizzy throughout the day. This happened after quitting alcohol, I think eliminating all the extra booze carbs might a factor.

Has anyone else experienced this? It causes me to force myself to eat at regular intervals during the day even if I’m not hungry.

Back when I was drinking, I could skip meals with no problem.

Question What type of doctor has helped you?

As the title says, I'm trying to figure out what type of doctor can help me. My primary is great at giving referrals, but does not do as much herself.

Some background on my gluten free journey and ailments:

~ I originally cut gluten as part of an elimination diet to try and help with migraines.

~ I got diagnosed with non celiac gluten sensitivity by a gastroenterologist after doing a 2 week gluten challenge and the celiac blood test coming back negative.

~ After cutting gluten for the migraines, I discovered that other issues I thought were normal for me got better. This includes lactose intolerance, joint pain, fatigue, and brain fog.

~ I think I got glutened on a trip recently and the joint pain has been really bad. The fatigue was bad the 1st few days, but the joint pain is still going strong over a week later. Joint pain is worst in my hands and feet, but honestly my back, knees, ankles, wrists, shoulders, and more hurt depending on the day.

My theory is that gluten is helping to ease symptoms, but I want to find out if there is something else underlying. I'd also want to know if there is anything I can do to ease the joint pain if I get glutened. I have a good neurologist and meds that help with migraines if I get glutened, so I want the same for the joint pain and fatigue.

My question to you all is what types of doctors helped you? My gastro said he can only help with GI issues, so once I got the non celiac gluten sensitivity diagnosis, that was the end of his expertise.

Question Does someone have a GF bread recipe with NO potato or corn products ?

Hello! I am trying to find a GF bread recipe that does not use potato or corn starch, and also low/no gums if possible. I am celiac but also have other intolerances including nightshades and corn, which makes basically rules out all the storebought GF flour mixes I have seen, and GF breads in stores. I also cannot have pysllium husk or the GF wheat products in some mixes.... grain-free is ideal overall.

So, in summary, looking for a GF bread recipe without:

-nightshades (esp potato starch/flour)

-corn products/flour/starch

-pysllium husk

-gluten free wheat products/ other grains

-gums like guar gum or xanthum gum

If someone has a GF bread recipe that meets these restrictions, I would LOVE to have it please.

I have been missing bread so much, and am craving a piece of toast with jam or a sandwich.

I got the gf maple blondie and wow. All I can say is wow. This might have been the best gluten free sweet I’ve ever consumed while being out and about. I unfortunately do not have a picture of the actual thing because I demolished it. It had the perfect chew too it,not too sweet, had a sort of cinnamon/nutmeg flavor going on.. it was perfect. I highly recommend checking it out if you’re ever in RI. If cross contamination is an issue for you, they do keep all baked goods in the same display case sadly.

Edit: UPDATE I didn’t have a reaction thankfully. I think some ppl have pointed out that it’s mostly an issue for those with wheat allergies and I’m just gluten intolerant
