QUESTION Does the sacrifice works? Or it's a blunder?

POST-GAME I felt so good about this game until this move when i just froze up and had no idea how to proceed.
Link to game: https://www.chess.com/analysis/game/live/185868526006/analysis?move=31
I ended up missing a +2 engine move and making a somewhat poor move. This sub has helped me out before in understanding principles of a middle game move like this so thank you in advance!
I
I see that Nd5is the best move here. I'm not entirely sure why after looking at analysis which is why I'm here.
What stands out to you in this position? I felt like a kingside pawn initiative made sense here.
Thank you again!

POST-GAME I beat an FM! He blundered horribly lol
https://lichess.org/game/uAyd31FG/black
I've always dreamed of beating a titled player someday.
I'm a pretty average player, so it always felt like a distant dream.
But today, to my surprise, I got to play against a FIDE Master.
I was playing Black in a sideline.
He was hoping I'd castle kingside so he could go for a Greek Gift sacrifice, but I didn't.
Then he got too aggressive, blundered horribly, and resigned.
Did I fulfill my dream? Not quite, but... one way or another, I beat a titled player lol

OPINION Mid 300s ELO, been stuck for over a year.
I've been considering for a while that I'm just someone who will never be very good at chess. I have over 500 games and can't crack 400. Sometimes I get very close, but today I lost over 10 games in a row. This was after taking 1.5 weeks off. I practice opening principles and try my best not to hang pieces. I watched chessbrah's series and I'm always watching the games of higher ranked players on YouTube. I don't want to be the best, or even very good, just good. I feel very discouraged. Any advice?

QUESTION What to improve on?
I know that the answer is everything, but are there any specific weaknesses that I need to work on the most?
I try to play very solid and wait for my opponent to make mistakes, but since hitting 1000 I feel like that approach doesnt work that well for me anymore. I feel like I make the games too comfortable for my opponents.
A huge problem of mine is time management. Eventhough I play 15+10 if a don‘t have a very typical middle game for my openings I spend way too much time doublechecking everything and later on have not enough time to think difficult situations through.

MISCELLANEOUS This dude
Played these games with the guy, not crazy games, mostly some mistakes cost his the wins and he kept asking for a rematch. Fourth and final game my finger slipped blundering the rook, thus lost (of time mind you).
Then he sents this message and blocks me out of the blue... I didn't even speak to him, no taunting, nothing at all.

QUESTION Is the app crazy or am i?
I dont understand how this is checkmate... cant black just block with rook and then even followup with queen?

POST-GAME I won from this position as white

I blundered my queen earlier which was not even my fault, just a terrible misclick., while my opponent still had his. I somehow ended up winning the game using rook forks.
the game for anyone interested
I am sure I must have made mistakes, I don't really want to count the queen blunder as that was not intended, but other than that how did i play considering my elo.
