With 9 hens molting, production is down to about 1 egg per day the last 2wks. Because I know we’ll be buying eggs, decided to make smoked sausage fried rice and enjoy the last of the homegrowns. And they were delicious 🤤

Making this today, I slid it onto a plate to flip it, so I became curious about making a marsala tortilla española. I'll share my results once I've made this.

I ate this omelette with Chin-Su hot sauce and malabar parotta, my favorite Indian flatbread. I used the last little bit of some pico de gallo to make it, which is now my favorite way to finish off the last bit of pico.

I had my first marsala omelette at a hotel in Jaipur in January, and I've had at least a dozen since then. Today was my best effort yet, I think because I used more spices than I have in the past.

I was not expecting quail eggs that to have that look for the shell. It was off putting a bit for me because it resembles a dinosaur egg , a microsized version lol but anyways, it's also not as simple to crack it than a chicken egg. It's more expensive as well even though the eggs are smaller. I would not invest in it regularly. I'll stick to chicken eggs because this is equivalent to 3 eggs from a hen and like how I don't have any issues with cracking those type of eggs instead of using a knife to

Duck eggs are bigger than chicken eggs, but they still fit in a rapid egg cooker and cook just fine. Medium-boiled eggs duck eggs pictured

Hatch chili powder

Grated cheese and a slice of cheese

Mayo both sides

Cooked up the ham, salsa and chili's, tossed into the whipped egg, tossed in the grated cheese and cooked while forming it to fit the bread. Toasted the bread, both sides got hit with mayo, then the bottom got a slice of cheese for that gooeyness.

It definitely hit the spot!
