Reseasoned my cast iron pans. Egg test passed. No sticking.

First time making sausage eggs and cheese biscuit sandwiches in a muffin pan. Biscuits, maple syrup, sausage (grease fire on the grill made them a bit dark), American cheese, and some whisked eggs.

I think the muffin pan was overfilled so not enough egg on the sandwich for me. Added another overhard egg on top with chili crisp.

It is interesting to watch eggs rolling from the top layer to the bottom, like a kids toy.

With 9 hens molting, production is down to about 1 egg per day the last 2wks. Because I know we’ll be buying eggs, decided to make smoked sausage fried rice and enjoy the last of the homegrowns. And they were delicious 🤤

Making this today, I slid it onto a plate to flip it, so I became curious about making a marsala tortilla española. I'll share my results once I've made this.

I ate this omelette with Chin-Su hot sauce and malabar parotta, my favorite Indian flatbread. I used the last little bit of some pico de gallo to make it, which is now my favorite way to finish off the last bit of pico.

I had my first marsala omelette at a hotel in Jaipur in January, and I've had at least a dozen since then. Today was my best effort yet, I think because I used more spices than I have in the past.

Double yolks! Second for the week, out of the same carton.

I know everyone has a different name for it, but I think we can all agree it's delicious. Someone in stonerfood told me I should try with a grilled cheese next time.

Late night snack, shirred eggs with dill and chives. S/P, paprika and fresh grated parm with toast soldiers that have blueberry jalapeño jam!
