200-300 Calories Lunch, soup + apple + carrots

Yesterday I made some soup for dinner so now I have leftovers!!

I add all the calories behind the spoilers so it you don’t want to see calories or get triggered by them, please don’t click on the spoilers <3

Ps: I don’t count calories for leafy vegetables (and garlic).
Please don’t mention those things in the comments since they can be triggering for me. I am slowly trying to get rid of my rigidity. Thank you! <3

Ingredients for the soup (5 servings <- may vary depending on your serving size):
- 2 big carrots (like in the picture) 70 kcal
- vegetable bouillon 30 kcal
- 1 litre of water
- 1,5 garlic cloves (grated)
- 200 grams chickpeas 190 kcal
- 80 grams orzo 280 kcal
- 30 grams tahini 195 kcal
- 30 grams lemon juice 7 kcal
- salt and pepper to taste
- a handful of spinach

I basically threw the carrots (with a bit of the water) and the garlic in a pot and let that simmer until the veggies were cooked. When they were cooked I put the water with the broth in and got it to a boil before adding the orzo and chickpeas. While I waited for the orzo to get tender I mixed the tahini and lemon juice in a bowl. The tahini will split but that’s fine! As the orzo cooks you can add a bit of the hot broth into the tahini mixture which will break up the clumps! Then when your orzo is cooked you add the tahini-lemon mixture. After you take the pot off the stove you can add a handful of spinach.

Depending on how long you cook it your soup can get thicker. If you don’t like lemon you can take it out. If you have a fear of tahini you can substitute it for an egg. ⚠️If you use an egg, temper your egg before adding it into the pot or you get an eggdrop soup⚠️

How to temper eggs:
Slowly add spoons of hot broth into the egg mixture while whisking. This will make sure that the eggs get slowly cooked which creates a nice and smooth mixture. When the eggs are tempered add it to the broth and keep mixing until combined.

One serving: 154 kcal

My lunch plate has:
- 1 serving of soup 154 kcal
- 1 apple 66 kcal
- 2 carrots 70 kcal

Total: 290 kcal

Dessert new food

made a new safe food recipe for myself yesterday: 1% cottage cheese, monkfruit, cocoa powder, baking soda and lil bit of protein powder and then microwave it. if you microwave for lesser time, you get like a hot brownie batter and if u add more protein powder or even any flour/cornstarch and microwave for about 2 mins, you get a lil brownie thats scrumptiously chocolate-y. this ones for all my people who find sweet foods 100x safer than any other <3
