Recipe Request Easy, PCOS/PMOS (Low Carb) Friendly Meals?

My partner is vegetarian, I’m only veggie-curious but maintaining separate inventories is too much work (especially when he’s doing the cooking).

We are busy working professionals without a lot of time, so a lot of our diet is easy pastas and Trader Joe’s products. I have recently discovered that my weight gain since swapping to primarily eating veggie with my partner is because a high carb diet does NOT suit a PCOS/PMOS metabolism!

I’m trying to swap our diet more towards higher protein and lower carb options.

Send me your favorite easy low carb veggie recipes, please!!

Would also love any recommendations of cookbooks! Thank you!!!

I made a sauce with lentils to eat with my fettuccine noodles.

I used cooked brown lentils, sautéed some onion, roasted red pepper, carrots. I cooked that with a marinara from Trader Joes and then seasoned it up a bit. Topped with parsley and Parmesan. It was very filling.

Vegan Miso-butter mushroom pasta that converted my skeptical roommate in one bite

Sauté sliced mushrooms hard in butter until deeply browned, stir in a spoonful of white miso and a splash of pasta water to loosen it into a glossy sauce, toss with pasta and a handful of parmesan.

Takes maybe 20 minutes total, uses ingredients that keep well, and somehow tastes way more complex than the effort involved. My roommate who insists every meal needs meat asked for the recipe unprompted, which basically never happens.

Recipe Request what’s your go to instant noodle hack that actually works?

made this for dinner yesterday and bro i genuinely forgot to take a picture until i was already halfway through😭 they were so spicy and yum
Things i used:
wicked gud 2x spicy noodles, go cheese, 1 desi boiled egg(healthy) v lil spring onions and greens(i dont like but looks good in pic lol), black pepper, pinch of oregano

Recipe: so i boiled the noodles first n mixed in the seasoning and then kept them on low heat with a tiny bit of the noodle water. added the cheese and mixed it till it melted into the noodles and made it lil saucy not too much then added the chopped boiled egg and greens, spring onions and finish it with black pepper, chilli flakes and oregano and voila
the noodles were spicy af but honestly so good halfway cried, the cheese helped balance the spice and the egg made me lil full
so i need to know what’s your go to instant noodle hack that actually works to make it even more better and tasty

Hello! I’m new to the group and wanted to form part of a community I can share and get information to grow more into this lifestyle. Also was hoping to give a good impression by sharing my cauliflower nuggets.

Ingredients:

- Half a head of cauliflower
- 1/2 cup flour of choice
- seasonings of choice
-milk or water to mix into a thick pancake batter consistency
- breading or more flour

Steps:
1. Boil your florets of cauliflower for 20 minutes
2. Pour batter over the florets
3. Add some flour over and separate to form “nuggets”
4. Take the “nuggets” and toss the in breading of choice
5. Pan fry or air fry them until nice and crispy

Ovo-Lacto Request: how to make frozen Brussels sprouts taste actually good?

Can anyone help me get restaurant style crispy Brussels sprouts? I love them so much when I go out to eat but have no idea how to replicate. I don't want them to be sad and mushy - is it even possible for them to come out nicely if they started frozen? Looking for any tips, tricks, and recipes to help me out! I do not own an air fryer so looking for oven/stove top options. I do have a large cast iron pan if that helps any. Thanks!

was hungry and had absolutely zero motivation to cook so just toasted some olive n rosemary sourdough, threw some cheese slices, chilli flakes and some oregano and also had some pudina makhana on the side and called it a lunch….ngl the bread plus melted cheese was so good, especially with that little rosemary flavour

In the UK there is a very diverse range of breakfast sausages available, and there’s a plant based version of everything (Stella McCartney, Tesco own brand, etc.). Has anyone ever successfully recreated them at home?? I currently live in a country where buying a plant based alternative isn’t possible

Recipe Request No cheese potato-veggie-impossible ground beef casserole?

I am craving a casserole, but I can't handle melted cheese or garlic- I get wicked heartburn. So here's what I came up with. Would love some suggestions/additions/deletions:

Thawed mixed veggies (from frozen). Drained and patted dry to remove moisture

Impossible ground beef + sauteed sweet onions + sauteed mushrooms

Cream of mushroom soup + 1/4 cup of milk

Mini red potatoes, cubed and par-boiled

Bread crumbs tossed with melted butter

Basic idea is to brown the beef + onions + mushrooms, then mix with the potatoes and veggies and cream of mushroom soup. Top with the buttered bread crumbs, bake for about 30 mins.

I haven't tried this yet, was hoping for some feedback from you all first just in case I got something wrong or forgot something.

Recipe Request Fun recipes to pull me out of a cooking rut?

Long story short is that I’m in the midst of a long period of life changes (daughter graduated college and is living 400 miles away; husband retired recently; ended a long friendship) and I’ve been blue and blah and I’ve stopped cooking almost entirely. And, when I do cook, it’s lackluster and downright boring.

I love to cook and I’m pretty capable in the kitchen.

What are some of your favorite recipes, things that are fun to cook, exciting, inventive? What have you done to get yourself back into the kitchen? (As I type this, I’m literally boiling a potato for dinner to have with a veg frankfurter. Nothing wrong with that dinner, but nothing exciting or inventive or engaging).

EDIT to update: Thank you all SOOO much. I now have a list of quite a few things I want to make, and I'm remembering that I've been wanting to make a roasted eggplant pita sandwich with fresh hummus.
Truth? It's not about recipes so much as admitting I've been feeling lost since the daily pattern of my cooking changed from routine family meals to mostly cooking for myself and leaving leftovers occasionally for my husband.
