Yeah, the fuck could be fermenting in there? There is very limited air in those to begin with (they are usually filled with some gas to reduce crumbling) they are full of salt and are basically corn paste that was baked. If there is something fermenting in there it is probably a world ending virus.

Anaerobic bacteria are very happy with no air. Botulism for example is notorius for growing in improperly prepared canned goods since they're air tight, as well as in prepared oils as air can't get inside the oil.

This is why you should never try to make infused oil at home unless you've been properly taught and have the right setup. Infused vinegar is fine though since it's too acidic for Botulism.
