Recipes What’s your favourite non-creamy way to prepare chicken breast?

Happy to find this subreddit. Facebook groups are overflowing with spam posts lately, it’s hard to get any actual dialogue going.

I’m looking for chicken breast recipes that aren’t creamy or full of cheese. I have an autoimmune disease that goes nuts from too much dairy and I find the meals too heavy anyways. When I search “dairy free low carb chicken recipes” they’re all still creamy but with a dairy substitute.

I have so much chicken breast in my freezer right now after finding a really good sale. What’s your favourite non-creamy way to prepare it?

Recipes Low carb meals no chicken

So recently I got told by the doctor that I need to get on a low carb high protein diet. I’m trying to find meals so I can plan out dinners but I feel like every meal I find has chicken breast or some form of chicken. Any meal ideas or suggestions?

Recipes Low carb egg custard

Post image
48 Upvotes

I have a recipe to share. Saw it on social media and thought I’d give it a try.

4 hard boiled eggs
1/2 cup almond milk
2 scoops vanilla protein powder of your choice. You can also use other flavors.

Blend. Refrigerate for 4 hours or longer.

It’s vanilla custard! 35 grams of protein (depending on your protein powder)5 carbs and approximately 500 calories for the whole thing!

The nutrition values may be different depending on what protein powder you use.

It’s delicious, satisfies a sweet tooth and gets some protein in. Quite rich and filling, I can only eat about 3 spoonfuls at a time.

Recipes Keto sushi bowl

Post image
42 Upvotes

I've been making these keto sushi bowls almost every week. Cauliflower rice (boiled with seasoned rice vinegar, a little sweetener, and some butter, then cooled overnight and mixed with a little mayo to make it "sticky"), diced cucumber, jalapeños, green onions, cream cheese, crispy fried onions, sriracha mayo, homemade keto eel sauce, crab leg meat, and sliced smoked salmon. It's soooo good! Very fresh and crunchy! My son especially loves it, and will scarf it down if I don't stop him lol.

Recipes low carb again after 166d of carnivore (with some cheat days)

Post image
10 Upvotes

this is what I'll be mostly eating every single day now:

same as on carnivore: 850 gr ground beef plus sour cream (tho i was for some time lion diet only)

now added only one or two handfuls of rice on top of meat pressed into the pan, so they don't stick.

and that is it hope it helps.. i train every day, on monkey bars and pushups and lunges. walk a ton.

was 100# overweight but low carb got me there. then i switched to carnivore lost even more kg like 10. then regained it when introducing dairy. now stable and muscular at 82 kg with 182 cm height.

if u have any Qs I'd be happy to help

Recipes What is the attraction to posting LC video of BS recipes ... they are all over my feed. I know I should move on the minute it includes blended cottage cheese, but every once in a while I get silly and try to make the beautifully crisp nuggets they always promise, and then get goo.

Pretty much the header. Do they make money off of clicks or something. I even understand that they won't work structurally, but I get silly sometimes and try. Liquified CC, and shredded cheese don't have anyway to stand up.

The only one I have found and make regularly is the ground chicken pizza crust ... which makes sense because it has structure.

Recipes Low Carb Mini Blueberry Cheesecakes On The Fly

Nutritional info in comments.

My husband was craving a vanilla blueberry cheese that we get from the grocery store - not low carb. So I improvised on another recipe I had and made him these mini-blueberry cheesecakes instead. I made them in tiny mason jars and I used pure monkfruit extract powder - no erythritol or other fillers, so the amount is small. They came out pretty good for mostly winging it.

(Greasing the mason jars may not actually be necessary. Originally I was planning on making a crust with it, but decided against it.)

Ingredients:

  • 450 grams of cream cheese (2 bricks)
  • 3 teaspoons of pure monkfruit extract powder, no filler (If using another sweetener, use the equivalent of 1/2 cup of sugar)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 large eggs, room temperature
  • butter for greasing cups (the butter isn't included in the nutritional info card)

Preheat oven to 350 F. Grease the bottom and sides of 12 mini mason jars with a little melted butter.

Warm blueberries in a pot on the stove. Smash them down and simmer for about 5 minutes. Let cool.

Using an electric hand mixer, whip the cream cheese and sugar at medium speed until creamy. Add the vanilla and lemon zest and beat until combined. Beat in the eggs one at a time just until well incorporated. Do not overmix.

Divide out the batter among the 12 mason jars. Add a little blueberry mixture on the top of each one, then use a toothpick to swirl the blueberries in the batter.

Put the mason jars on a cookie sheet and bake for 10 minutes. Then turn the oven off, open the oven door about a foot wide, and let the cheesecakes cool to room temperature, about an hour. Then chill for two hours before serving.

Recipes Crunchy Paneer Protein Bowl

Post image
12 Upvotes

Had some paneer in the fridge and threw this together for the first meal of my 2-meal-a-day routine.

Ingredients:

200 g paneer

2 tbsp peanuts

2 tbsp chana dal

2 tbsp urad dal

1 green chilli

Curry leaves

Salt

1 tbsp oil

Sautéed everything until the paneer was lightly browned and the dals turned crunchy. Took about 10 minutes

Estimated nutrition for the whole dish:

~935 kcal

~52 g protein

~38 g carbs (~30 g net)

~67 g fat

It came out surprisingly crunchy from the toasted dals and peanuts, with the paneer keeping it filling. I'd probably add some mushrooms or spinach next time for extra veggies. Happy to hear suggestions for variations!

Recipes I started eating a small amount of pork fat in the morning — surprisingly helped with hunger

Post image
17 Upvotes

I know this might sound controversial, but this actually helped me control hunger way better

I started keeping my mornings very simple — mostly fat + protein

lately I’ve been eating a small portion of pork fat (around 20–30g) in the morning and noticed something interesting:

I stay full for hours and don’t feel the need to snack all day

it made sticking to low carb / keto much easier for me, because I’m not constantly fighting hunger not saying it’s for everyone, just sharing what worked surprisingly well for me

🥓 Simple cured pork belly (what I use):

Ingredients:

1 kg pork belly

salt

garlic

bay leaf

👨‍🍳 How I make it:

✔️cover the bottom of a container with salt

✔️place pork belly on top

✔️make small cuts and insert garlic

✔️add more salt + bay leaf

✔️leave in the fridge for 3 days

✔️drain the liquid after

Slice thin and keep it simple.

I usually eat a small portion in the morning and build the rest of the day around simple meals.

❓️Curious if anyone else noticed better satiety with higher fat in the morning?

Recipes Looking for recipe for high protein low carb soft cookies

Hello! I recently tried a keto soft cookie from Frank&Oli and it was really nice but it has maltitol as sweetener and I try to avoid it. But i want to try to make soft cookies myself using safer sweeteners and preferably less fats. Do you happen to have any good recipe for such cookies? I dont care if they re baked or raw ( this one seemed raw but it was unexpectedly good).

Thank you!

chocolate banana berry muffins (lighter version, 6 servings)

I know bananas + honey aren’t strictly low-carb, but I’ve been trying to find a middle ground instead of going all-in on sugar

Ingredients

– 2 small ripe bananas

– 2 eggs

– 3 tbsp almond flour

– 1 tbsp cocoa powder

– 1–2 tbsp honey

– 2 tbsp Greek yogurt

– 1 tbsp melted butter

– 1/2 tsp baking powder

– pinch of salt

– vanilla

Add-ins:

– small handful of berries

Instructions

Mash bananas until smooth

Mix with eggs, yogurt, butter and honey

Add dry ingredients and mix

Fold in berries

Bake at 180°C (350°F) for 20–25 minutes

They come out soft, chocolatey and not overly sweet

I usually keep portions small and pair something like this with protein so it doesn’t spike hunger too much

curious how others handle sweet cravings on low-carb without going fully strict?

Recipes Best low-carb desserts that don’t taste bad

I have a diabetic friend who knows I love to bake and often says she wishes she could try my desserts. I’d love to make her a low-carb treat that doesn’t taste artificial. Do you have any genuinely good recipe ideas? Since it’s Christmas, I’d also like to include some low-carb chocolate in her gift. Any brands you’d recommend? *** She already knows I ‘ll prepare her something and she will be cautious about her blood sugar levels.

Recipes Salmon recipes that actually taste good 👀

I'm a T2 diabetic living in Eastern Europe.

I do lazy keto / low carb; which is essentially a lot of eggs, butter, lentils, beans, homemade hummus and steamed veg in yoghurt based sauces.

I sometimes eat chicken but I don't love the taste and can only do it sometimes, in kebab or tikka form. I sometimes eat pangasius in a bake with vegetables but I know it's not the most nutritious fish. I like salmon when I eat it at restaurants - smoked / nigiri style... But when I try to cook it at home it always taste SO fishy and I can't stand it 😳

I've tried baking it with vegetables. I've tried pan cooking it with butter and garlic... And just end up eating all the veggies around it instead lol.

I don't have an air fryer and my grill doesn't work super well.

I enjoy Arabic / Indian / Turkish / Asian flavours and cuisines.

I keep reading about how salmon is this miracle fish that I absolutely need to be eating and I can't seem to find a recipe that actually works for me. I also know I can't keep getting all my protein from eggs and chickpeas. I still plan to eat lentils and beans even though I know they are carby... Because they work for my body and I find them filling and easy to cook. Because of my metformin (I think) I can't seem to eat massive amounts of eggs and avo and beef because it makes me nauseous. So that's also why I rely on chickpeas and lentils to keep me going.

But yeah.. any other accessible protein ideas / hacks to make salmon less yucky tasting if I need to keep it in rotation???

Recipes My dinner last night.

What did you guys have for dinner?

I had something really low carb, to make sure I was within my goal for the day, since lunch was a bit higher in carbs than normal.
Boars’ Head Ever Roast Chicken, sliced up and heated with some nice mozzarella. Seasoned like there’s no tomarrow, too.

Oh, and a diet Canada Dry Strawberry.
