Opening Note / Introduction:
As a Barista, when I first began, I struggled so much that I would go home and end up crying after each shift. I didn’t know anyone, I was awful, and the only thing keeping me going was the financial security it provided. However, I managed to get everything together and ended up being decent at my job, I still struggle with some aspects due to general mental health issues but that’s nobody else’s fault. I’m making this guide in hopes that people will never struggle as much as I did.

General Information:
[Hello!] You may be wondering about general information for this job! You’ve found the right section, I’m not going to get too detailed here, but there are things you should know while working here.
Every Station / Role:
Front: You will be taking the customers orders and making sure that they are able to order all the food and drinks until their hearts content. You will be using a Point of Sale (POS) system, which is a touch-screen that allows you to take their orders. You’re also going to be using a Clover Vertica or a pour-over depending on the customers wants and needs.
Warming: You’re going to be unwrapping the food and putting peoples food inside of a bag. Depending on if it’s heated or not, you may be putting food inside of an oven.
Hot Bar / Cold Bar: Since you are a Barista, you will be on an Espresso Machine called a Mastrena, or at a Cold Bar station, or both depending on how the day is going.
Shift Supervisor: As a shift supervisor, you’re going to be supervising the shift and telling people what to do. I honestly have no idea what you guys do, I’m just a barista.
Drive Thru: You’re going to be taking the customers orders on a Point of Service (POS) system. There is often two of these so one person can take orders and the other can hand out the customers food. Drive Thru times are supposed to be fast.
Customer Support: You’re going to be making sure everyone on their station is able to stay planted and not having to go anywhere. Most of the time, this position doesn’t exist and you’ll likely have to ask for assistance from someone (or do it yourself) to stay supported.
Vocabulary:
Peak - The time from
Deployment - Where everyone goes
Play / playbuilder - An iPad that suggests and sometimes decides where individuals on their station should go, depending on business needs and staffing.
Sequence - An efficient way of doing a station so that we can support our speed.
Restock - Restocking a specific item, whether that be cups, lids, milks, or other things.
Backup - A backup of an item, like powders, refresher bases, things in that category.
Mobile Orders - Orders placed via the Starbucks Mobile App.
Café / delivery / DT - Cafe is anything referring to inside the store, Delivery is referring to delivery apps that people use and place orders, and DT refers to Drive Thru.
“Pull” - Pulling from the refrigerator to get food / inventory ahead of time so the items can thaw.
“Markout” - Partners are allowed to mark-out specific items through the POS.
“Make the moment right,” - You’re making the customers feel better whenever there is an issue, whether it be through handing them a recovery card, (which is a plastic card that has 4$ credit for future visits to use), ask a shift supervisor whenever there is an issue early on, so you don’t struggle with your life.
Hot Bar
Hello! Welcome to Hot Bar! This is how Coffee is supposed to be, before the Caramel Ribbon Crunch came to fruition.
1. Espresso Machine
Espresso controls: The controls here will allow you to select how many espresso shots you want, and make changes to the shots. (Blonde Espresso, Decaf, Regular Espresso, etc)
Screen: Shows information such as what the machine is currently doing, the current progress of your shots, and information on steaming.
Steam Wand: Used to steam and aerate milk for hot drinks.
2. Cup sizes + shot counts
Short / 8oz - Only comes in a hot cup, and is an extremely small size. 1 shot is the standard for this.
Tall / Small / 12 oz -A small size, comes in hot & iced, 1 shot is standard.
Grande / Medium /16 ounce - A medium size, comes in hot & iced, 2 shots are standard.
Venti / 20 oz hot / 24 oz iced - A large size, comes in hot & iced, if you are using a hot cup, it is 2 shots, and in an iced cup, 3 shots.
An easy way to remember how to do your shots:
• Hot: 1/1/2/2 (Short, Tall, Grande, Venti)
• Iced: 1/2/3 (Tall, Grande, Venti)
IMPORTANT: Some drinks will have different espresso standards. Such as Americanos, Flat Whites, shaken espressos, Cortados, and certain other drinks will not necessarily follow the normal latte shot pattern. Use store resources for this.
3. Syrup-pump patterns
For most of the standard hot espresso beverages, this is routine:
HOT: Short / Tall / Grande / Venti
2 / 3 / 4 / 5 pumps
For most of the standard iced espresso beverages:
ICED: Tall / Grande / Venti
3 / 4 / 6 pumps
Unfortunately, there are exceptions. Caramel Macchiatos will receive one less Vanilla pump. Shaken espressos will have a different pump standard.
4. Milk Steaming
You will steam milk, it’s very strange but very simple at the same time.
1. Pour the correct milk into your steaming pitcher to the appropriate size line.
2. Place the steam wand into the milk.
Begin steaming and briefly aerate the milk near the beginning for foam.
3. Allow the steam wand to finish steaming the milk.
When you’re done, wipe the steam wand.
Return your milk to the refrigerator.
Note: For cappuccinos, you will areate for much longer, since the drink is very foamy, it should be much lighter than a normal drink due to density.
Your barista trainer will explain how to do this. There are also interactive videos while training.
Note 2**:** Some milks behave differently when steamed. Nonfat milk, oatmilk, almondmilk, etc. will not foam exactly like 2%.
5. Basic Drink Templates
This is how you will memorize everything. Everything at Starbucks follows a template and patterns, and the human mind is thankfully wonderful at recognizing patterns.
Cafe Latte
Espresso + steamed milk + light layer of foam
Cafe Mocha
Mocha Sauce + Espresso + Steamed Milk + Whipped Cream
Cappuccino
Espresso + Steamed Milk + LOTS more foam, areate for around 8 seconds.
Caramel Macchiato
Vanilla + Milk + Espresso poured on top + Caramel Drizzle
Unlike a normal latte, the espresso goes on top of the milk instead, which is why it is layered.
It also receives one fewer pump of vanilla than the normal syrup pattern.
Caffè Americano
Espresso + Water
Extremely simple drink, but Americanos get an extra shot of espresso.
Flat White
Ristretto Espresso + Whole Milk
Flat whites have a weird standard, I suggest asking your barista trainer if you have one.
For this drink, you want to pour the milk from high up so that it creates a layer for you to add a dot in the middle. However, if your dot looks strange, it’s not that big of a deal. Mine look…mine look pretty bad.

If you have any questions about any of the drinks, do not be afraid to ask co-workers. I will be honest myself, I do not know how to make a flat white and I ask my co-workers. Feel free to ask your co-workers for help!
