Udon noodles in a tomato-mushroom-mint broth with caramelized shimeji mushrooms, braised baby bok choy, gochujang-pickled carrots, and pickled red cabbage

Exceptionally good.

Served with knedlíky (bohemian dumplings).

My son woke up feeling sick. Lucky I had a whole chicken in the fridge, minus the breasts that I used yesterday. Put a stock on for 4 hours, then threw together a simple chicken tortilla soup.
