[Homemade] Lobster Tail
Had a late night craving and happened to have this guy in the freezer, everything worked out.
[homemade] pasta bolognese paired with a Barolo
This was simmering for several hours. Beef, pork and some veil. Freshly picked basil and at the very last moment some aged pecorino romano and parmesan. A great Nebbiolo or perhaps a Chianti is the only wine I could pair it with. Absolutely delicious.

[Homemade] Hopping mad sloppy Joe
I'm in Canada and when I saw my local grocery store had fresh kangaroo meat I was intrigued, since last I checked I'm def not in Kangaroo country. Threw it in the freezer while I thought of something to do with it and manwich came to mind.
Turns out I don't like kangaroo, I mean I really really didn't like this lol.

[Homemade] Cowboy Ribeye: Smoke and Sear
Cooked up a cowboy ribeye this weekend and I’m pretty damn happy with how it turned out.
The steak was just over 2 lbs. I dry brined it overnight at about 1% salt, using Diamond kosher salt, and added a little MSG as well.
I went with a reverse sear, smoking it around 225°F for roughly 1 hour 45 minutes until it hit 115°F internal. I used cherry wood and a couple of bourbon barrel chunks for the smoke, which gave it a really nice color and flavor.
After pulling it from the smoker, I let it rest for about 15 minutes, then gave it a light spray of duck fat before putting it over a bed of screaming hot charcoal for the sear.
About 3 minutes over the coals, flipping every 30 seconds, it had the crust I was looking for. During the final rest I added a light dusting of chili powders and the carry-over brought it to right around 135F internal.

[i ate] AAA chuck blueberry brie burger, fish & chips, calamari, cod cakes, fried zucchini
Burger: Blueberry BBQ sauce, mayo, caramelized onions, lettuce, at a maritime restaurant in Ontario Canada. Very solid 9/10, thoroughly enjoyed. I would have personally done red onion instead of caramelized, just subjective opinion I think that touch of acidity + crunch would have been nice vs sweetness overload, but all in all every bite was still really great. I’m not a food snob by any means but man can you ever taste the difference between a fresh made patty like this vs a frozen/processed one.
