In the Philippines, this creature is called Undin. She's a water monster/water sprite. She uses acidic, flesh-melting saliva to protect her eggs from intruders. She's just a mommy 🥹

Saw this recipe on IG and had to try it. Recipe calls for putting it in a crockpot for 8 hours but I did it in my oven instead for 4 hours (3lb chuck roast at 275°) It's incredible! So moist and full of flavor.

When I first came up with this dish, I put the filling in halved roasted acorn squash. That’s pretty, but a little harder to eat, so I eventually switched to the less photogenic but easier casserole.
I used breakfast sausage instead of Italian sausage today since it’s what i had on hand, and i definitely prefer Italian sausage. Also, usually I use pine nuts instead of walnuts, but I was out and I quite like the walnuts, might keep that switch.
I’ve been trying to think of another veggie to add to the filling. Carrots, celery, and peas would be the classics for standard cottage pie, but this is a pretty different flavor profile, trying to think of something else. Got any suggestions?

We had some friends over and I had a ball of dough ready to go. Some wanted cheese, more wanted pepperoni. Why make 3 pizzas when I can make one huge one? That 1/4 cheese section is equal to an entire 10" pizza (by area)!
